Spaghetti alla Puttanesca is one of those old standby recipes that I hadn't touched since becoming vegan, because I thought it just wouldn't be the same without anchovies. And, like so many other dishes I thought could not be veganized, I am now rediscovering it. In perhaps what is just another rite of passage, I ponder why the namesake Puttana thought their concoction needed anchovies in the first place, when the briny capers are just heavenly!

For some time after I had bid sayonara to meat, eggs and dairy, I continued the Japanese institution of going out for sushi with friends and family. At first, I ate varieties consisting of mostly vegetables such as natto (fermented soybeans) and green onions, cucumber, takuon (pickled radish), kampyo (dried gourds), as well as inarizushi (fried bean curd filled with sushi rice and black sesame seeds). As an omnivore, I had always considered sushi not only umai (delicious), but healthy, compared to traditional convenience food like sandwiches or burgers. However, eventually it dawned on me, that even minus the fish, restaurant or store-bought sushi wasn't particularly healthy for 2 reasons.

The Baker's Edge pans aren't cheap, and I knew shipping them to Japan wouldn't be either, so I was trying to convince myself that just one type would be good enough. Being a vegan, the special coating on the lasagna pan didn't matter much to me. So, it came down to size: could I live with making small lasagna in the brownie pan or using the lasagna pan for baking brownies? Well, life is too short for compromises, so I bought both.

Cheese lovers be forewarned: you may be in for some disappointment if you're expecting tofu to taste like Feta cheese or chickpeas like Havarti. The introduction to the book even acknowledges that "uncheeses are not going to be like dairy cheeses, so please adjust your expectations accordingly. "

As a result of my initial experience, “The Uncheese Cookbook” sat dormant on my shelf for some time. Little did I realize that I would come back to Stepaniak's book later (many times), finding it had improved with age. Its most valuable lesson is that it introduces unfamiliar ingredients, and uses them as well as more commonplace items--including raw nuts--in groundbreaking fashion.

Being away from home can make business travel and vacation challenging and stressful for anyone who's trying to eat healthy. This is particularly so for new vegans who are still trying to adjust to a diet without animal products but may have fewer alternatives than usual.

However, given the fact that business travel is often necessary for our jobs, and most people enjoy going somewhere new for vacation, how does the vegan or aspiring vegan deal with eating away from home?

My tastebuds may have changed since becoming vegan, but the vegan sausages tasted fantastic--as good as meat sausages--piled on top of my plate of pasta. Preparing these yourself, you realize that herbs and spices are what make most dishes taste delicious, anyway. The wheat gluten makes them chewy on the inside, and fried, they become crispy on the outside just like meat sausage. But they're so much healthier and humane. And, did I mention that vegan sausages are fun to make, too?
