		<description><![CDATA[It may come as a surprise--given all you’ve heard about the Mediterranean Diet, “healthy fats”, and “good cholesterol” you may be surprised to learn that a diet containing NO (zero!) added oils is optimum. Rather than using olive oil (or other processed oils), choose instead to eat the whole food, such as olives. A major advantage of eating a whole foods, plant based diet comes from greatly reducing processed foods like extracted oils that have little or no nutritional value nor health benefits.]]></description>

		<description><![CDATA[No doubt that E2 diet and exercise program is the best prescription for rapid weight loss and ultimately top fitness and vitality. However, unless you have incredibly strong motivation and support network (family, friends, co-workers, etc)--giving up consuming animal products is probably an ambitious enough goal to set your sights in the beginning. Don't get me wrong: this book is a valuable resource I wish I had read years ago. Just be sure you are mentally prepared, because E2 is the whole shebang.]]></description>

		<description><![CDATA[For some time after I had bid sayonara to meat, eggs and dairy, I continued the Japanese institution of going out for sushi with friends and family. At first, I ate varieties consisting of mostly vegetables such as natto (fermented soybeans) and green onions, cucumber, takuon (pickled radish), kampyo (dried gourds), as well as inarizushi (fried bean curd filled with sushi rice and black sesame seeds). As an omnivore, I had always considered sushi not only umai (delicious), but healthy, compared to traditional convenience food like sandwiches or burgers. However, eventually it dawned on me, that even minus the fish, restaurant or store-bought sushi wasn't particularly healthy for 2 reasons.]]></description>

As a result of my initial experience, “The Uncheese Cookbook” sat dormant on my shelf for some time. Little did I realize that I would come back to Stepaniak's book later (many times), finding it had improved with age.  Its most valuable lesson is that it introduces unfamiliar ingredients, and uses them as well as more commonplace items--including raw nuts--in groundbreaking fashion.]]></description>
