Many people think vegan diets are boring, but there can be nothing further from the truth! Between vegan cookbooks and online vegan recipe sites, there are so many incredible vegan recipes available I often end up combining two or more recipes into one to save time. This is for when you can't decide whether to make stew or pasta.

While Gardein is not available here in Japan, it's becoming the defacto meat substitute in high-end restaurants across the U.S. The best thing about such products is beginning vegans can use them in familiar recipes, and hopefully will discover it's not difficult to give up eating meat altogether. While some vegans may frown upon using Gardein and other meat substitutes, they are convenient and satisfying--a blessing for busy cooks trying to transition themselves and their families to a plant-based diet.

Before becoming vegan, parmigiana "you name it" was one of my favorite dishes. Who could resist anything coated in oil, two or three kinds of cheese, and tomato sauce?
So when I spied a pack of decent sized "American (globe) eggplant" the other day (vs. the smaller and more commonly available Japanese variety-this is Japan, go figure!), I knew it was time to try out the low-fat version of eggplant parmesan I had seen on FatFreeVegan.com.

Spaghetti alla Puttanesca is one of those old standby recipes that I hadn't touched since becoming vegan, because I thought it just wouldn't be the same without anchovies. And, like so many other dishes I thought could not be veganized, I am now rediscovering it. In perhaps what is just another rite of passage, I ponder why the namesake Puttana thought their concoction needed anchovies in the first place, when the briny capers are just heavenly!

My tastebuds may have changed since becoming vegan, but the vegan sausages tasted fantastic--as good as meat sausages--piled on top of my plate of pasta. Preparing these yourself, you realize that herbs and spices are what make most dishes taste delicious, anyway. The wheat gluten makes them chewy on the inside, and fried, they become crispy on the outside just like meat sausage. But they're so much healthier and humane. And, did I mention that vegan sausages are fun to make, too?
