Cooking with okara (soybean pulp) is fairly common among vegans, in their effort to put the fiber rich bi-product of homemade soy milk to good use. Even without okara however, you can make nutrient-dense cookies by using whole grains and fruit purees and dried fruits to replace some or all of the sugar and oil.

A big attraction of Nava’s reuben recipe is that it's baked, rather than fried, therefore no need to use margarine or oil on the bread. Using Isa’s tempeh marinade recipe for both tempeh and seitan, the jar of sauerkraut that had languished for almost 4 years was gone in weeks! Not only are these vegan reubens delicious, they contain half the calories of typical meat-based reubens, and no cholesterol!

Many people think vegan diets are boring, but there can be nothing further from the truth! Between vegan cookbooks and online vegan recipe sites, there are so many incredible vegan recipes available I often end up combining two or more recipes into one to save time. This is for when you can't decide whether to make stew or pasta.

Recently, I combined vegan crab cake recipes from my two favorite vegan cookbooks to bring back fond Eastern Shore summer memories. Although I wanted to try the Old Bay Tofu Cake recipe from Tal Ronnen's "The Conscious Cook", I already had tempeh and all the other ingredients necessary to make the Chesapeake Tempeh Cakes from Isa Chandra Moskowitz' "Vegan Brunch". Because I couldn't find Old Bay Seasoning in Japan, I made that from scratch, too!

No doubt that E2 diet and exercise program is the best prescription for rapid weight loss and ultimately top fitness and vitality. However, unless you have incredibly strong motivation and support network (family, friends, co-workers, etc)--giving up consuming animal products is probably an ambitious enough goal to set your sights in the beginning. Don't get me wrong: this book is a valuable resource I wish I had read years ago. Just be sure you are mentally prepared, because E2 is the whole shebang.

While we would have been delighted to taste Tal's cooking firsthand, he did present my partner a copy of his attractive cookbook (#3 New York Times bestseller, highest ranking ever for any cookbook), inscribed "Keep spreading the vegan lifestyle in Japan". In the private tatami-room overlooking a serene Zen garden, Tal guided us through dozens of mouth-watering plant-based recipes (accompanied by beautiful photos Tal styled himself) and techniques, as well as serves as a tribute to other chefs and partners he has worked with during his cooking career.

Spaghetti alla Puttanesca is one of those old standby recipes that I hadn't touched since becoming vegan, because I thought it just wouldn't be the same without anchovies. And, like so many other dishes I thought could not be veganized, I am now rediscovering it. In perhaps what is just another rite of passage, I ponder why the namesake Puttana thought their concoction needed anchovies in the first place, when the briny capers are just heavenly!

Cheese lovers be forewarned: you may be in for some disappointment if you're expecting tofu to taste like Feta cheese or chickpeas like Havarti. The introduction to the book even acknowledges that "uncheeses are not going to be like dairy cheeses, so please adjust your expectations accordingly. "

As a result of my initial experience, “The Uncheese Cookbook” sat dormant on my shelf for some time. Little did I realize that I would come back to Stepaniak's book later (many times), finding it had improved with age. Its most valuable lesson is that it introduces unfamiliar ingredients, and uses them as well as more commonplace items--including raw nuts--in groundbreaking fashion.
